Freisa del Monferrato DOC. What Accornero presents here is a little gem for enthusiasts. Practically unknown outside Piedmont, Freisa is a very pleasant wine in its simplicity. Light, fragrant and elegant, it has an incredible drinkability, so much so that it is considered the classic everyday bottle. Accornero makes it from grapes harvested in small plots of less than half a hectare, and the first harvest dates back to 1986. Brilliant garnet red, this pleasant Piedmont red has intense aromas reminiscent of freshly made wine, with a delicate spiciness of cinnamon and nutmeg. In the mouth it is dry and immediate. Slightly tannic and well balanced. It goes well with first courses with meat sauces, but also with cold cuts and classic boiled meats. For lovers of tradition, however, this is the perfect wine to accompany a mouth-watering dish of vitello tonnato.

Chardonnay is certainly not an unknown grape variety. But, however well known it may be to everyone, it is difficult to give a precise and unambiguous picture of it. Because if the base is always the same, the environment where it is grown, its climate and soil, as well as the technique with which it is vinified, can give rise to extremely different wines. A master of versatility, one might say. In this case, Jermann harvests his Chardonnay in early September, when the aromatic ripening is complete but the grapes still have a nice natural acidity. Super-traditional vinification in the cellar, the wine is then left to mature on the lees, in steel tanks, for about six months and a few months in the bottle. In the glass, one thus discovers a wine characterised by a beautiful bright straw colour with greenish highlights, an intense, fruity and slightly aromatic bouquet. The same pleasant sensation of richness and softness also characterises the taste. In the mouth, in fact, the natural aromas of the vine are enhanced even more. Good today, this Friulian white is perfectly capable of waiting a few years in the cellar, waiting for the right occasion. Perfect as an aperitif, on the table it goes well with fish, shellfish and vegetable creams.

With Spasso, Vite Colte has launched itself (successfully) into a new wine project. It is a pure Barbera, left to dry on the vine in the vineyard until it reaches the right concentration of sugar. This is a difficult technique that presents many unknowns, given that the bunches, despite the withering, must remain perfectly healthy in order not to ruin the final result. The vinification then takes place in steel, with long macerations that continue for over two weeks at a temperature of about 25 degrees. Malolactic fermentation follows and the wine is aged for at least six months in barriques. The end result is a wine characterized by an intense ruby red colour, with a wide and elegant bouquet of aromas, with hints of ripe red fruit, plum jam and currants. In the mouth it is intense, with clear notes of dried fruit, soft, warm and enveloping.

Verdeca is a grape that is relatively unknown to wine lovers. It is an autochthonous vine of our South that grows well on poor soils and in a very hot climate. Controlled temperature, only stainless steel and selected yeasts are wisely used to give life to a pleasantly fresh wine with a very marked mineral character. Straw yellow, in the glass it reveals a rich and floral bouquet. Try it with seafood and shellfish.

This red wine is made from the grapes of a single 80-year-old vineyard of unknown varieties. The vineyard in question is located on the right side of the road bordering DO Jumilla and DO Alicante and thus, for years, considered table grapes, underpaid and mistreated. Locals call them "The Bastard Vineyards." It took the creativity of Casa Rojo's Wine Gurus to decide that those grapes deserved, after years of neglect, to be enhanced. That is why they decided to select and harvest those vineyards, producing this unique wine. Harvested by hand in the second half of September, the clusters undergo double selection on arrival at the winery, followed by destemming. Fermentation in temperature-controlled stainless steel tanks, after malolactic fermentation, the wine ages in new French oak barrels for 6 months. An attractive ruby red color, this wine is fresh and balsamic on the nose, highlighting notes of ripe black fruit and fine leather details from its passage in wood. In the mouth it is a great classic, with soft tannins and a long, mouthwatering finish. For lovers of impossible challenges, this is the right wine to uncork at your next barbecue.

Lafaurie-Peyraguey is certainly not an unknown producer. In the microcosm of quality estates in the Sauternes region, this Chteau is undoubtedly one of the best-loved by enthusiasts and experts alike. Bordering the iconic Chteau d'Yquem, this estate produces wines of great elegance and finesse year after year. Semillon for 93%, Sauvignon Blanc for 6 and Muscadelle in a very small portion, this wine is the result of a long process that begins with the harvesting of grapes that have been dried and attacked by noble rot. The sugar concentrated in the berries gives rise to a very sweet must that is fermented in 225-litre oak barrels. Once fermentation is complete, with some of the sugar remaining, the wine is then sent to the maturing phase lasting about 10 months, again in barriques, followed by a further 8 months in steel tanks. Golden yellow, the nose has complex aromas of tropical fruit, pineapple, mango, toasted almonds and beeswax. In the mouth it is pleasantly elegant, medium-bodied, sweet but not cloying. Ideal to end an evening on a high note, it also goes well with foie gras and blue cheeses. Good today, it is not afraid to mature for a few more years in the cellar. The wait will be amply repaid at the moment of tasting.
